HIs last book was Baking in America. I remember meeting him at a conference - his approach to making 100% whole wheat bread was really marvelous - I learned a lot from him.
In this book, he goes across the world and looks at different items that may be baked, not just bread.
He talks about fried sweet pastries and doughs, flat breads, savory pastries, and savory yeast breads and pies. The recipe for Assyrian Spinach Pie caught my eye since I grew up in an Assyrian home. This one is a lot different from the one my mother used to make, but the picture makes it look so beautiful and the ingredient list is so charming, I can't wait to try it. Of course he includes cookies and cakes and some basic tips as well. I'm really impressed with this book!
