Bon Appetit Green Issue: Broccoli

The February issue of Bon Appetit magazine is called the Green Issue with plenty of green things going on.  What caught my eye was "At the Market: Broccoli."  It's a year round favorite, but in the winter time it packs the sweetest flavor. 

There are so many varieites of broccoli.  There's a Chinese type we really enjoy called gailan that has more crunch and a narrower stem.  And this has been crossed with broccoli rabe, the Italian variety that's more bitter, to create broccolini.  Long, bitter, the size of a pencil.
