Tuna, Sardines, Anchovies

The most remarkable tuna, sardines, and anchovies are coming from Spain and Italy. The Corti Brothers in Sacramento are importing these from Europe.
Bonito Del Norte white tuna:
- Chunk Style - Round tins of solid white meat, lightly pink in color, delicate scent and flavor
- Ventresca - The belly meat, thin, white strips of the most elegant tuna produced, for special occasions
- Loins ( Filetti) - Light pink-white color, firm, slender cuts of outstanding flavor
- Entremes De Bonito - A delicious pate made from bonito, capers, tomato, spices
- Atun (yellowfin tuna)
