Varieties of Dates

Deglet Noor: These are the ones most commonly found in stores, imported from Algeria. Has a firm texture and the color ranges from light red to straw.
Halawy: A soft date, thick flesh, caramelly and sweet. Yellow to golden brown from Iraq.
Khadrawy: A soft date from Iraq, cures well, ripens to amber, then cured to a reddish brown, with a caramel like texture and a sweet flavor.
Zahidi: A semi-dry date from Iraq with a large seed. Works well to processing and softening by steam hydration.
Thoory: Driest variety with firm skin and less sticky. Flesh chewiest and is the staple diet of Nomadic tribes in deserts. Often called the "Bread Date." So dry there's no risk of spoiling.
Medjool: The most extraordinary from Morocco. Soft, lush, and utterly delicious. This is the king of all dates!
