The Original Cobb Salad

Cobb Salad



Serves 4-6

1/2		iceberg lettuce, chopped
1/2	bunch	watercress,chopped
1/2		curly endive, frizie or chicory, chopped 
1/2		romaine, chopped
3/4	cup	Brown Derby Old-Fashioned Salad Dressing
2		medium tomatoes, seeded and diced
2		cooked chicken breasts, skinned and diced
6	strips	crisp bacon, chopped fine
1		avocado, chopped
*3		hard boiled eggs, chopped
1/2	cup	grated blue cheese	
2-3		finely chopped green onions

Mix the four lettuces and toss with dressing. Place in a large decorative salad bowl and distribute the garnishes over it in the following manner: Spread parallel strips of tomatoes, chicken, bacon, avocado, eggs and blue cheese over the lettuce. Sprinkle green onions over the whole thing. 

*Optional-to reduce fat, use egg whites only, or cook a non- fat egg substitute like an omelet. Let it cool and chop it. 

Narsai's Brown Derby Old-Fashioned Salad Dressing

1/4 cup red wine vinegar
1/4 cup water
1/4 tsp sugar
juice of 1/2 lemon
1/2 tsp salt
1/2 tsp fresh ground black pepper
2-3 dashes Worcestershire
1/2 tsp powdered mustard
1 small garlic clove, crushed
1/2 cup light olive oil

Mix all ingredients together.  An easy way to crush the garlic is to simply puree the entire dressing in a blender.
