There are so many varieties of carrots:
Dragon - from the Far East; deep, reddish coppery color on the outside; brighter color on the inside
Yellow - mellow yellow
White - Parsnip stunt double
Cobalt - two-toned roots
Pink - when cooked turned into a deep coral color
Baby - usually no more than 3-4 inches
Orange long - supermarket staple
Round - dense and stubby
Parsley Root - white, known as "Hamburg parsley"
Purple Carrot - thick, deep purple originated from the Middle East
Parsnip - relative of the carrot and a winter root staple
Baby-Cut - whittled from large, mature, misshapen carrots
