  Cherry Crumble Cake

CHERRY CRUMBLE CAKE



Crumb Topping:

    1/3    cup    flour
    2    TBS    butter
    1/4    cup    brown sugar

Mix flour and butter until crumbly.  Add brown sugar and beat until uniformly granular.  Set side.

Batter:

    3        eggs
    1 1/3    cups    sugar
    1 1/2    cups    cake flour
    1    tsp    baking powder

Beat eggs and sugar until well blended and fluffy.  Stir flour and baking powder together; then add to egg mixture and mix only until smooth.  Transfer to an 8" x 8" glass casserole that has been oiled.

Filling:

    1    lb    Bing Cherries, pitted
    1/2    cup    sugar
    1    TBS    tapioca starch or cornstarch
    1    tsp    almond extract

Stir ingredients together and immediately pour over the batter.  Sprinkle with crumb topping and bake at 350°F for 60-70 minutes, or until a toothpick inserted in the center comes out clean.

NOTE:  If the top browns before the cake is finished, place a piece of aluminum foil loosely over the top.
