Mark has written a lot of cookbooks, writes for the NY Times and is a best-selling author. I particularly love "How to Cook Everything."
This book is marvelous. You get a lot of background materials. He offers easy substitutions for your recipes. No jicama? Use radishes. Instead of eggplant, use zucchini. Don't get bogged down in one specific thing. He also gives you simple techniques for cooking. And recipes that take 20 minutes or less!
