SWEET AND SOUR BEETS

Serves 6
3/4 cup water
2 TBS vinegar
2 ½ TBS sugar
2 TBS cornstarch
3 cups cooked or canned beets
zest and juice of one orange
2 TBS butter
1/4 tsp cayenne pepper or white pepper
1/2 tsp salt
Stir water, vinegar, sugar and cornstarch in a small saucepan until the cornstarch has dissolved. Place over low heat and, stirring constantly, cook until it thickens.
Add remaining ingredients and cook slowly until heated through.
NOTE: If using canned beets, use the same amount of canning liquid instead of the water.
